Gluten-Free Cannoli Recipe

Light and delicately sweet, the golden-brown shells fry up to perfection in avocado oil. Inside, a velvety ricotta cream sweetened with honey and a splash of vanilla makes each bite irresistibly smooth. Finish with a dip in mini chocolate chips or crushed pistachios for a bakery-style finish that’s perfect for parties, holidays or just a cozy night in.

Gluten-Free Cannoli Recipe

Shells

  • 2 cups Simple Mills Protein Pancake Mix
  • 1/2 cup arrowroot powder
  • 2 tsp. psyllium husk
  • 2 egg whites
  • 2 Tbsp. butter
  • 2 Tbsp. marsala wine
  • Avocado oil (for frying)

Filling

  • 16 oz. whole milk ricotta (well drained)
  • 1/3 cup honey
  • 1 tsp. vanilla extract

Garnish

  • Pistachios or mini chocolate chips
  1. In large bowl, combine shell ingredients minus the avocado oil. Mix until well combined and dough forms a smooth ball.
  2. Using rolling pin, roll dough to about 1/8-inch thickness, then cut 4-inch circles with round cutter.
  3. Using cannoli form, wrap circles loosely and seal with egg white.
  4. In pot for deep frying, heat avocado oil to 360 degrees F. Using tongs, carefully lower 2-3 cannoli forms in oil and fry until golden, about 1-2 minutes.
  5. To make cream, prepare ricotta by squeezing with cheese cloth or clean towel to remove liquid.
  6. In medium bowl, add drained ricotta and whisk in honey and vanilla extract until smooth and creamy.
  7. Fill pastry bag or plastic bag with ricotta cream mixture, snip the tip off and fill cannoli shells.
  8. Dip ends in desired toppings and serve fresh.
