Founded by a husband and wife team, Jovial Foods was created out of a passion for food, farming and traditions. When Carla and Rodolfo had a daughter with gluten sensitivity, they looked to a nearly extinct ancient grain called einkorn, or as they call it, “nature’s original wheat.” This was the start of Jovial Foods’ mission to address the many issues faced by those with food sensitivities. Jovial’s pastas may be untraditional in their ingredients, but the pasta-making process is anything but. The brown rice and einkorn harvested on small, family-owned farms are then brought to a family-run pasta manufacturer outside of Lucca, Italy, where the family has crafted pasta for over a century. Pasta artisans mix Jovial’s flours with locally sourced spring water and use bronze dies to press each shape, giving the pasta a coarser surface to better hold sauce. The pasta is then dried slowly at low temperatures to preserve nutrients and flavor.
