
Roasted Carrots With Parmesan & Herbs

- 1 lb. carrots (peeled, ends trimmed and cut in half)
- Avocado oil spray
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
- 1/2 tsp. thyme
- 1/2 tsp. Italian seasoning
- 2 Tbsp. parmesan
- 2 Tbsp. fresh parsley (chopped)
- Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
- In small bowl, mix together spices.
- On baking sheet, arrange carrots, spray with avocado oil and sprinkle on spices.
- Bake 25-30 minutes until carrots are browned.
- Remove from oven, top with parmesan and fresh parsley. Serve immediately.
