Goat Cheese, Spinach & Mushroom Quesadilla
[vc_row][vc_column][vc_column_text]Creamy goat cheese, sautéed spinach and savory mushrooms come together in this deliciously simple mushroom quesadilla. Packed with flavor and made with wholesome ingredients, this vegetarian favorite is a lighter take on classic quesadillas—without sacrificing taste. Serve it up golden and crispy with a side of salsa for the perfect balance of rich and refreshing.

Goat Cheese, Spinach & Mushroom Quesadilla
- 1 tortilla (of choice)
- 1 cup fresh spinach (chopped)
- 1/2 cup sliced white mushrooms (or baby Bella mushrooms)
- 2 oz. goat cheese (crumbled)
- 1 clove garlic (minced)
- 1 tsp. olive oil
- 1/2 tsp. dried oregano
- Salt (to taste)
- Pepper (to taste)
- Salsa (to serve)
- In frying pan over medium heat, heat olive oil and garlic until garlic becomes fragrant.
- Add mushrooms, oregano, salt and pepper. Cook until mushrooms are tender, about 5 minutes.
- Stir in chopped spinach and cook 1-2 minutes until wilted. Remove from heat.
- On one half of the tortilla, spread mushroom-spinach and sprinkle crumbled goat cheese over it. Fold empty side over loaded side.
- Heat a dry frying pan over medium heat. Place folded quesadilla on pan and cook about 2-3 minutes per side, pressing lightly with a spatula, until golden brown and crispy.
- Slice into wedges and serve with salsa.
