Increase the fun of Halloween with spooky-cute muffins lovingly laced with chai spices. Gluten-free flour mixes with fall flavors of cinnamon, cardamom, ginger and clove. Incorporating coconut oil, applesauce and maple syrup instead of processed sugars, dairy and dyes makes for a muffin more monsters can munch and every goblin will gobble up gleefully.
Halloween Chai Muffins (Gluten-Free)

- 1 cup gluten-free all-purpose flour (or regular flour)
- 1 Tbsp. cinnamon
- 1 tsp. cardamom
- ½ tsp. ginger
- ¼ tsp. ground clove
- ? tsp. black pepper
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- ¼ tsp. pink salt
- ½ cup applesauce
- ½ cup coconut oil
- ¼ cup maple syrup
- 1 Tbsp. egg replacer (+ 2 Tbsp. water, or 1 whole egg)
Preheat oven to 350 degrees F. Line 12 wells of muffin pan with black paper cups.
- In medium mixing bowl, combine flour, spices, cream of tartar, baking soda and salt.
- Stir in remaining ingredients.
- Add 3 tablespoons batter per muffin cup.
- Bake 15-18 minutes until toothpick inserted into center of muffin comes out clean.
To decorate, cut out bats with black construction paper. Tape bats to toothpicks and place into muffins.
