The marinade for these grilled tofu skewers combines fresh turmeric, garlic, Cajun seasoning and red pepper flakes. Grilled Tofu Skewers with Spicy Chipotle Sauce

- 2 blocks extra firm tofu (pressed, cut into small cubes)
Marinade
- 2 tsp. minced turmeric
- 2 cloves garlic (minced)
- 4 Tbsp. coconut aminos
- 2 tsp. Cajun seasoning
- 1 tsp. red pepper flakes
- Himalayan pink salt (to taste)
Chipotle serving sauce
- 1/3 cup chipotle peppers in adobo sauce (jarred or canned)
- 1 tsp. maple syrup
- Drizzle olive oil
Garnish
- Chives (chopped)
- To press tofu, cut blocks in 3 equal parts lengthwise. Place pieces on cutting board. Cover with clean dish cloth. Top with heavy cook book. Let drain 1 hr.
- In small bowl, whisk together all marinade ingredients.
- Slice drained, pressed tofu into cubes. In large bowl, combine tofu cubes and marinade. Refrigerate 1-2 hours.
- To barbecue, slide tofu cubes onto skewers. Brush grill with olive oil and let it burn off. Brush more oil on grill and add skewers. Cook 15-20 minutes on each side, flipping once.
- For chipotle serving sauce, combine all sauce ingredients in blender and blend well.
- To serve, pour sauce into sauce bowls and set on plate with tofu.
