Peach & Almond Overnight Oats

- 1 cup rolled oats
- 1 Tbsp. light brown sugar (packed)
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1 cup unsweetened almond milk
- 3 Tbsp. peach preserves
- 1 Tbsp. almond butter
- 1/2 tsp. vanilla bean paste
- Diced fresh peaches
- Sliced almonds
- In medium bowl, stir together oats, brown sugar, cinnamon and ginger.
- Add almond milk, peach preserves, almond butter and vanilla bean paste and combine well. Let sit 10 minutes at room temperature, then stir again.
- Pour into individual ramekins, jars or small serving bowls. Refrigerate overnight.
- To serve, top with diced fresh peaches and sliced almonds.
- Store in the refrigerator for up to 5 days.
