
Gluten-Free Falafel Balls (Vegan)

- 1 can (15 oz. chickpeas, drained and rinsed)
- 1 small onion (diced)
- 3 Tbsp. olive oil
- 1/4 cup fresh parsley (diced)
- 1/4 cup fresh cilantro (minced)
- 2 Tbsp. hemp seeds
- 2 Tbsp. sesame seeds
- 1 tsp. ground cumin
- 1/2 tsp. cumin seeds
- 1 tsp. coriander
- 1 tsp. paprika
- 1/2 tsp. Redmond Real Salt
- 1/2 tsp. black pepper
- 1/2 tsp. baking soda
- 3 Tbsp. Bob’s Red Mill One-to-One Baking Flour Gluten Free
- 1 Tbsp. Organic SunButter Sunflower Butter
- Preheat oven to 400 degrees F.
- Line rimmed baking sheet with parchment paper. Spray parchment paper lightly with extra virgin olive oil cooking spray.
- Add all ingredients to food processor or blender. Blend until smooth.
- Using hands or small ice cream scoop, form about 2 Tbsp. of mixture into bite-sized balls and arrange on baking sheet.
- Spray falafel balls lightly with extra virgin olive oil spray and bake 22 minutes or until golden brown.
