Gluten-Free Easter Sugar Cookies

With a soft, chewy texture and sweet vanilla flavor, they’re perfect for decorating with dreamy pastel hues and festive flair. The dough is easy to roll and cut into shapes, making it a fun family activity for little kitchen helpers, too. Once baked and cooled, get creative with homemade frosting tinted in soft spring shades made with plant-based food coloring, of course! Think pale pinks, baby blues, sunny yellows and grassy greens. Whether you’re filling an Easter basket, hosting a brunch or just in the mood to bake something sweet, these charming cookies are a colorful (and gluten-free) way to celebrate the season.
Gluten-Free Easter Sugar Cookies
Cookies
- 2-3/4 cups Gluten-Free 1-to-1 Baking Flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 cup butter (soft)
- 1-1/4 cup granulated sugar
- 1 egg
- 1 tsp. vanilla extract
Frosting
- 1/2 cup unsalted butter (softened)
- 1 tsp. vanilla extract
- Pinch salt
- 2-1/2 cups powdered sugar (divided)
- 2-3 Tbsp. whole milk
- Food coloring
- Prepare two baking sheets with parchment paper and set aside.
- In small bowl, combine flour, baking powder and salt.
- In large bowl, mix butter and sugar until combined. Add egg and vanilla and mix thoroughly. Add dry ingredients and mix until just combined.
- Shape dough into ball, wrap with plastic and chill 1 hour.
- Preheat oven to 325 degrees F.
- Place chilled dough between two pieces of parchment paper and roll to 1/8-inch thickness, removing and replacing parchment paper as needed.
- Using lightly floured 2-inch round cookie cutter, cut cookies and place onto prepared baking sheets about 1 inch apart.
- Bake 15-18 minutes, rotating halfway through baking, until cookie edges are slightly golden.
- Let cook on baking sheets 10 minutes, then remove to wire racks to cool completely.
- To make frosting, cream butter until fluffy. Add vanilla and salt.
- Gradually add 2 cups powdered sugar then milk 1 Tbsp. at a time.
- Add desired food coloring and frost cookies.
