Iced Lemon Pound Cake

Iced Lemon Pound Cake
Cake
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. pink salt
- 3 eggs
- 3/4 cup sugar
- 1/2 cup coconut oil
- 1 Tbsp. lemon zest
- 1/2 cup lemon juice
Icing
- 1 cup powdered sugar
- 1 Tbsp. lemon zest
- 1 Tbsp. lemon juice
- 1 Tbsp. plant-based milk (or dairy milk)
- Preheat oven to 350 degrees F.
- In large mixing bowl, whisk together eggs and sugar. Add coconut oil and whisk.
- Add remaining cake ingredients and stir until combined.
- In 5x9-inch loaf pan, pour batter.
- Bake 40-45 minutes, until toothpick inserted in center comes out clean. Remove from oven and allow to cool.
- For icing, in mixing bowl, whisk together powdered sugar, lemon zest, lemon juice and milk.
- Pour icing over cooled pound cake.
- Slice and serve.
