Pasta Salad with Artichokes & Olives
Serves 8
Ingredients
8 oz. gluten-free penne pasta
1 cup artichoke hearts in olive oil
½ cup pitted Kalamata olives
2 cups heirloom tomatoes, chopped
2 cups cucumber, peeled and chopped
¼ cup freshly squeezed lemon juice
¼ tsp. sea salt
¼ tsp. black pepper
Directions
- Cook pasta according to package directions. Drain, rinse and set aside.
- In a large bowl, toss pasta with remaining ingredients.
- Chill pasta salad in the refrigerator for about an hour before serving.
