Baked Orange Chicken

- 2 lbs. skin-on chicken thighs and/or drumsticks
Sauce
- 1/4 cup orange juice and zest
- 2 Tbsp. capers and juice
- 2 Tbsp. olive oil
- 1/4 tsp. oregano
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 orange (sliced into wedges)
Garnish
- 1/4 cup chopped parsley
- Preheat oven to 425 degrees F. In bowl, whisk together all orange sauce ingredients.
- In 8x8-inch baking pan, arrange chicken and pour sauce over to coat. Add orange slices.
- Bake 40-45 minutes until internal temperature of chicken is 180 degrees F.
- To serve, remove orange slices and squeeze them over chicken. Top with parsley.
