Quinoa Chickpea Salad With Lemon Vinaigrette

- 1 cup cooked quinoa (cooled completely)
- 13 oz. chickpeas (rinsed and drained)
- 1/2 cup jarred roasted red peppers (diced)
- 1/4 cup red onion (diced)
- 1/4 cup fresh parsley (chopped)
- 2 Tbsp. fresh mint
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1/2 tsp ground cumin
- Salt (to taste)
- Black pepper (to taste)
- In small bowl, whisk together olive oil, lemon juice, cumin, salt and pepper. Taste and adjust as desired.
- In large mixing bowl, combine cooked quinoa, chickpeas, roasted red peppers, red onion, parsley and mint.
- Pour dressing over salad and toss gently until everything is well coated.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
