In Vietnam, we worked with Pacific Basin Partnership and the non-profit Sustainable Food Group, providing training and technical support on soil nutrition, food safety and pest management practices to help farmers transition into organic peppercorn production.

Carrot Slaw With Curry Yogurt Dressing

Carrot Slaw With Curry Yogurt Dressing
Slaw
- 4 cups shredded carrots
- 1/2 cup golden raisins
- 1/4 cup dry roasted cashews (roughly chopped)
- 1/4 cup chopped green onions
- 1/4 cup loosely packed cilantro (chopped)
Curry Yogurt Dressing
- 1 tsp. honey or maple syrup
- 1/2 cup plain Greek yogurt or dairy-free alternative
- 1 Tbsp. avocado oil
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1 tsp. curry powder
- 1/2 tsp. garlic powder
- 1/8 tsp. black pepper
- 1/4 tsp. salt
- 1-2 Tbsp. water (for thinning if needed)
- To make dressing, whisk together all ingredients, using water only if needed. Taste and adjust seasoning, adding more lemon juice or salt, if desired.
- In large bowl, combine shredded carrots, golden raisins, toasted pistachios, scallions and fresh cilantro.
- Serve immediately for best taste and texture.
