Carrot Slaw With Curry Yogurt Dressing

Slaw
- 4 cups shredded carrots
- 1/2 cup golden raisins
- 1/4 cup dry roasted cashews (roughly chopped)
- 1/4 cup chopped green onions
- 1/4 cup loosely packed cilantro (chopped)
Curry Yogurt Dressing
- 1 tsp. honey or maple syrup
- 1/2 cup plain Greek yogurt or dairy-free alternative
- 1 Tbsp. avocado oil
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1 tsp. curry powder
- 1/2 tsp. garlic powder
- 1/8 tsp. black pepper
- 1/4 tsp. salt
- 1-2 Tbsp. water (for thinning if needed)
- To make dressing, whisk together all ingredients, using water only if needed. Taste and adjust seasoning, adding more lemon juice or salt, if desired.
