Things You'll Need:

3 eggs + 1/3 Cup Oil (Grapeseed or Vegetable) + 1/3 Cup Water + 1 Tbsp Vanilla

 

Cake

Makes one 8" round cake

 

Heat oven to 350°F. Grease 8-inch round cake pan well. Dust with 1-1/2 tsp of the mix; set aside

Whisk eggs, oil, water and vanilla in a large bowl. Add remaining mix; whisk until well blended

Pour batter into prepared pan

Bake 30-35 minutes or until a toothpick comes out clean. Cool 10 minutes. Loosen cake from sides of pan. Invert on wire rack; tap sharply on bottom of cake pan to release cake. Gently remove pan; cool completely before frosting

 

Cupcakes

Makes 12 cupcakes

 

Heat Oven to 350°F

Whisk eggs, oil, water and vanilla in a large bowl. Add baking mix; whisk until well blended

Spoon batter into 12 lightly greased or paper-lined muffin cups, filling each 2/3 full

Bake 15-20 minutes or until a toothpick comes out clean. If using paper liners, let cool completely before eating to prevent cupcakes from sticking to the paper; cool completely before frosting.

When it comes to sweet treats, cracker toffee couldn’t be simpler or more satisfying. Your salty-sweet (and crunchy!) fix will be so gratified, you’ll struggle to restrain yourself from going back for more. This gluten-free Easter rendition includes a layer of Simple Mills almond flour crackers soaked in a butter and brown sugar mixture, then baked and topped with vanilla frosting. Colorful sprinkles and sprouted pumpkin seeds add a touch of spring to this festive recipe. Switch out the frosting for chocolate and sprinkles for walnuts and you have a year-round dessert recipe. Gluten-Free Easter Cracker Toffee

  • 1 box Simple Mills Fine Ground Sea Salt Almond Flour Crackers
  • 1/4 cup butter or plant-based alternative
  • 1/4 cup organic brown sugar
  • 1/3 cup Simple Mills Vanilla frosting (at room temperature)
  • 1/4 cup sprouted pumpkin seeds

Optional: Natural sprinkles and candies

  1. Preheat oven to 400 degrees F and line baking sheet with parchment paper.
  2. Place crackers on baking sheet to form a rectangle and set aside.
  3. In small saucepan, melt butter and brown sugar over medium heat. Stir regularly and bring to boil for 2 minutes.
  4. Pour mixture over crackers and spread using spatula.
  5. Bake 6 minutes and let cool.
  6. Spread frosting onto toffee and garnish with pumpkin seeds, sprinkles and candies.

  7. Chill until frosting sets.
  8. Break into pieces and share.
