Winter Citrus Salad With Lime Tahini Dressing
- 2 cups raw walnuts
- Flaky sea salt
- 8 cups mixed greens or arugula
- 3 oranges (sliced)
- 1 shallot
- 2 avocados (sliced)
- 1 cup cubed or crumbled feta cheese
Lime Tahini Vinaigrette
- 1/4 cup extra virgin olive oil
- 1/4 cup lime juice
- 1/4 cup tahini
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. chopped fresh chives
- 2 tsp. honey
- In small glass jar, add all dressing ingredients.
- Close jar and shake to combine.
- In large salad bowl, add greens and toss with vinaigrette.
- Add orange slices, avocado, cheese and toasted nuts.
