
Classic Chicken Cacciatore

- 1 lb. chicken thighs (boneless, skinless)
- 1 Tbsp. olive oil
- 1 onion (sliced)
- 1 bell pepper (sliced)
- 1 cup black olives
- 16 oz. finely chopped tomato
- 1 clove garlic (diced)
- 1 tsp. Celtic salt
- 1/4 tsp. black pepper
- 2 tsp. Italian seasoning
- In French oven pot over medium-high heat on stovetop, sauté chicken in olive oil 10 minutes. Add onions and peppers and sauté another 10 minutes.
- Add remaining ingredients, cover and lower heat to simmer 1 hour.
- Serve dish with crusty bread or over pasta.
