It’s universally remembered as a happy day, the day one discovers jackfruit, the versatile meat substitute much praised in plant-based cuisine. Jackfruit itself doesn’t have much flavor, and that's one of the beautiful things about it. It’s a brilliant mimic that willingly takes on any flavor you desire. Young green jackfruit has thick, soft flesh that creates a meat-like texture and consistency when cooked, and this barbecue jackfruit “pulled pork” recipe is an ultimate example of the fruit’s brilliant and delicious malleability.
