A staple in Japanese diets for centuries, shirataki noodles are made when konjac flour is mixed with water (plus a little help from old-fashioned pickling lime to stabilize the noodle shape). This results in silky, transparent konjac noodles made up of 97 percent water and 3 percent soluble fiber.
