Be sure to prep ahead - the cashews need to soak overnight to blend into a smooth, velvety texture.
Ingredients
3 ripe peaches, cut in half
Fresh mint (can use basil)
Vanilla Cashew Cream
2 cups raw cashews, soaked overnight
1-2 tsp. vanilla
Pinch pure stevia or tiny drop of liquid stevia
1 cup water
Directions
- Drain and rinse soaked cashews. In high-speed blender or food processor, combine all cashew cream ingredients and process to smooth. Transfer to airtight contain and refrigerate until ready to use.
- Over open flame or grill, grill peaches until lightly glazed.
- To serve, drizzle cream over peach halves and garnish with fresh mint.
