Vegan White Chocolate Matcha Mousse
[vc_row][vc_column][vc_column_text]Luxuriously creamy and packed with unexpected flavor, this vegan matcha mousse is a dream for all dessert lovers. Made with rich coconut whipping cream, buttery cashews and a hint of vanilla, it’s naturally sweetened with maple syrup and elevated further by the earthy notes and vibrant color of matcha green tea powder. Vegan cacao butter (one of the most versatile of all chocolate ingredients, giving this vegan dessert its white chocolate notes) and ripe avocado lend an irresistible taste and smooth texture. Chill, top with fruit, nuts or coconut, and savor every spoonful of this masterful plant-based delight.
Vegan White Chocolate Matcha Mousse
- 2 cups coconut whipping cream
- 2 cups organic cashews (soaked overnight)
- 20 g organic cacao butter (melted)
- 1/2 ripe avocado
- 3 Tbsp. organic maple syrup
- 1/2 tsp. vanilla bean paste (or pure vanilla extract)
- 2 tsp. ceremonial-grade matcha powder
- 1/2 tsp. cardamom powder
Optional toppings
- 4 Frozen raspberries
- Mango slices
- 1 tsp. Fresh or toasted coconut
- 1 tsp. Chopped pistachios
- sprinkle Ground Cinnamon
- sprinkle Ground Cardamom
- sprinkle Cacao powder
- In double boiler, melt cacao butter.
- In food processor, combine all ingredients and blend until creamy consistency is reached.
- Pour into 4 small glass mason jars with lids, or similar. Refrigerate 1 hour.
- Serve as-is or with toppings of choice.
