
Vegan Lentil Soup With Potatoes

- 32 oz. vegetable broth
- 3 cups potato (cubed)
- 1 onion (chopped)
- 1 clove garlic (chopped)
- 1/2 red bell pepper (diced)
- 1 cup red lentils (rinsed)
- 1 tsp. pink salt
- 1/2 tsp. oregano
- 1/4 tsp. black pepper
- Cilantro (for garnish)
- In medium soup pot, combine broth, potato, onion, garlic and red bell pepper and bring to boil.
- Cover and simmer 10 minutes.
- Add lentils and seasonings. Bring to boil, cover and simmer 20 minutes.
- Sprinkle cilantro over each bowl when serving.
