
Glazed Vegan Ham

- 1 cup vegetable broth
- 3/4 tsp. vegan liquid smoke
- 3 Tbsp. avocado oil
- 1 Tbsp. ketchup
- 1-1/2 tsp. smoked sea salt
- 1/2 tsp. garlic powder
- 2 Tbsp. nutritional yeast
- 1 Tbsp. smoked paprika
- 14 oz. extra firm tofu (drained)
- 1-1/2 cups vital wheat gluten
- Whole cloves
Glaze
- 1/2 cup vegetable broth
- 2 Tbsp. maple syrup
- 1/2 tsp. Himalayan fine pink salt
- 1/2 tsp. smoked paprika
- In blender, combine all ingredients except vital wheat gluten and cloves; Blend until smooth.
- In large mixing bowl, pace vital wheat gluten and stir in blended mixture. Knead about 1 minute until mixture is firm.
- Using hands, form mixture into oblong ham-shaped loaf. Wrap in aluminum foil and secure tightly by pinching ends shut.
- In large pot with steamer basket, place “ham” into basket and fill with enough water to touch bottom of steamer basket. Cover with lid and cook 1 hour, adding water as needed. Remove from pot and set aside.
- Preheat oven to 375 degrees F. Remove ham from aluminum foil and place into baking dish.
- Using sharp knife, score ham across top and onto sides in a diamond pattern. Place whole cloves here and there into diamonds, using about 18.
- In small bowl, mix together glaze ingredients and evenly brush over ham.
Bake ham 25 minutes, basting with remaining glaze and juices and it cooks.
- Allow to cool slightly before slicing and serving.
