
Apple-Cinnamon Waffles With Vegan Brown Butter

- 1-½ cups gluten-free flour
- ½ cup oat flour
- 1 Tbsp. baking powder
- ½ tsp. baking soda
- 1 tsp. cinnamon
- ½ tsp. ground cloves
- 2 Tbsp. apple butter
- 2 Tbsp. chopped walnuts
- 1 Tbsp. flax meal (plus 3 Tbsp. water)
- 2 Tbsp. brown cane sugar
- 1-¼ cups plant-based milk
- ½ cup plant-based butter
- 1 apple (small dice)
- Lightly grease waffle maker and set to low heat.
- In large bowl, combine sifted flours, cinnamon, cloves, baking soda and baking powder.
- In small bowl, combine flax meal and 3 tablespoons water to create flax egg. Let sit to gel.
- In another bowl, whisk together diced apples, oat milk and sugar. Add flax egg and whisk to combine.
- In pot or deep pan on medium heat, heat butter, stirring with wooden spoon, until it begins to foam, smell nutty and turn light brown.
- Pour brown butter into wet mixture and whisk well.
- Incorporate all wet mixture into dry mixture, mixing at continuous pace until smooth and creamy.
- Pour ¼ cup batter into waffle maker and cook until done. Repeat until all batter is used.
