Simple Chicken Cacciatore Recipe in French Oven Pot on White Counter

Classic Chicken Cacciatore

1 lb. chicken thighs (boneless, skinless)
1 Tbsp. olive oil
1 onion (sliced)
1 bell pepper (sliced)
1 cup black olives
16 oz. finely chopped tomato
1 clove garlic (diced)
1 tsp. Celtic salt
1/4 tsp. black pepper
2 tsp. Italian seasoning

In French oven pot over medium-high heat on stovetop, sauté chicken in olive oil 10 minutes. Add onions and peppers and sauté another 10 minutes.
Add remaining ingredients, cover and lower heat to simmer 1 hour.
Serve dish with crusty bread or over pasta.
