Wintery Chicken Ramen With Ginger, Garlic & Spices

Ingredients

Instructions

  1. Cook noodles according to package directions. Drain and rinse in cold water; set aside.
  2. In large pot over medium heat, heat olive oil. Add chicken, salt and pepper and stir-fry for 1-2 minutes.
  3. Add garlic, tomato, onion and chili, if using. Cook, stirring occasionally for 2 minutes.
  4. Stir in red curry paste, turmeric, coriander and ginger until fragrant, about 1 minute.
  5. Stir in vegetable broth, Sproud milk, coconut sugar, aminos and SunButter. Simmer and stir occasionally until well combined, about 5 minutes.
  6. Stir in rice noodles.
  7. Remove from heat and stir in lime juice; season with salt and pepper to taste. Garnish with fresh parsley.
