White Chocolate & Pecan Protein Cookies

Cute and cuddly: though not typically how you’d describe a cookie, it’s spot-on in this case. These miniature rounds are beaming, edge to edge, with white chocolate chips. And that’s just the beginning. From the coconut-and-oat flour base to the vanilla-flavored protein powder, these bite-sized cookies are the sweet treat you can’t keep your hands off of. Go ahead – pick one up and try not to love its baby-plump stature and soft, chewy middle.

White Chocolate Chip Protein Cookies

Ingredients

½ cup coconut flour
3 scoops NLA Her Whey Vanilla Cupcake Protein Powder
1 Tbsp. oat flour
¼ cup white chocolate chips
¼ cup honey
1 Tbsp. almond milk
1 tsp. baking powder
1 tsp. vanilla flavoring
1 egg
Chopped pecans

Directions

  1. Preheat oven to 350 degrees F and coat a cookie sheet with non-stick cooking spray.
  2. In a large bowl, combine all cookie ingredients – except white chocolate chips and pecans – and stir into a thick dough.
  3. Add white chocolate chips and chopped pecans.
  4. Form dough into balls. Note: it will be sticky, but you can add more flour if it’s too sticky to work with.
  5. Place cookie dough balls on baking sheet and bake 8-10 minutes, or until golden.
  6. Flatten the cookies just a bit, if desired and eat as soon as you can!
