Watermelon Mozzarella Salad with Balsamic Glaze

Ingredients
- ½ cup balsamic vinegar
- 1 Tbsp. coconut sugar
- 5-6 lb. seedless watermelon
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
- 1 Tbsp. maple syrup or honey
- Chopped fresh basil leaves or fresh mint
- 6 oz. fresh mozzarella cubed
- Salt
- Pepper
Instructions

In a medium saucepan over medium-high heat, bring balsamic vinegar and coconut sugar to a boil. Reduce heat to medium and let the mixture simmer for 8-10 minutes or until it thickens to a syrupy consistency. Stir often to prevent burning.

Using a melon baller, scoop out about 4 cups of small watermelon balls and place in large bowl.

In small bowl, combine lime juice, olive oil and maple syrup. Pour over watermelon balls.

Add basil (I used ¼ cup) and mozzarella to bowl with watermelon and toss to combine.

Drizzle with balsamic glaze (I used about 2 Tbsp.) and sprinkle with salt and pepper to taste. Serve immediately.
