Lime Watermelon Juice with Mint

Serves 2

Ingredients

1/2 cup sparkling water or club soda
1/3 cup lime juice
1 tsp. liquid monk fruit or other liquid sweetener
4 cups cubed watermelon
4-6 fresh mint leaves
Lime wedge, to serve, optional

Directions

  1. In a high-speed blender, combine all ingredients except for sparkling water and process until smooth.
  2. Strain liquid and transfer to two glasses for serving. Add 1/4 cup sparkling water to each glass and stir.
  3. Garnish with a lime wedge if desired.

Note: To make in advance, refrigerate the blended watermelon juice for up to 12 hours and add sparkling water before serving.
