Watermelon, Feta & Mint Salad

Ingredients

  • 4 cups cubed watermelon
  • 2 Persian cucumbers sliced
  • 3 oz. feta cheese crumbles
  • 1/4 large red onion sliced
  • 1/2 cup pomegranate seeds
  • 1/2 cup loosely packed whole mint leaves
  • 3 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • Sea salt to taste
  • Black pepper to taste

Instructions

  1. In large serving bowl, combine watermelon, cucumber, cheese, onion, pomegranate and mint.
  2. In small bowl, whisk together lime juice and olive oil.
  3. Drizzle dressing over salad and toss together. Add salt and pepper to taste.
