Vegan Broccoli Burgers with Turmeric Tahini

If you’re craving something different for dinner, you’re in luck because it’s officially broc o’clock! These baked-to-perfection broccoli patties are extremely versatile and rank high above your typical frozen veggie burger. While they taste absolutely amazing layered high with lettuce, tomato, onion and avocado stuffed inside a bun – you can also slice one to serve over roasted veggies or a bed of crisp lettuce. Either way, drizzle with the following turmeric-tahini sauce, which is extremely easy to make while the burgers are baking!

Vegan Broccoli Burgers with Turmeric Tahini Sauce

Ingredients

Broccoli burgers

  • 2 tsp. olive oil
  • 1-1/4 cups chopped onion
  • 1 Tbsp. chopped jalapeno, optional
  • 2 chopped cloves garlic
  • 3 cups riced broccoli*
  • 1 cup frozen peas, thawed
  • 1 Tbsp. flax seed
  • 1 Tbsp. chia seed
  • 1 cup parsley
  • 1/2 cup almond flour
  • 3/4 tsp. pink salt

Turmeric tahini sauce

Optional

  • Burger buns
  • Lettuce
  • Sliced tomato
  • Sliced onion
  • Sliced avocado

Instructions

  1. Preheat oven 350 degrees F.
  2. Heat frying pan over medium heat. Add olive oil, then onion and jalapeno. Cook 5-6 minutes, or until onions start to become translucent. Add garlic and cook additional 2 minutes, stirring occasionally. Set aside to cool 5 minutes or so.
  3. In blender, combine broccoli rice, peas, flax, chia, parsley, almond flour and salt. Then add onion-garlic mixture. Blend until fully combined into a thick paste. You can leave a little chunkiness for added texture.
  4. Line baking sheet with parchment paper. Use spoon to scoop out about 3 tablespoons broccoli mix. Use hands to roll into ball, then flatten with palms to make burger shape. Place on baking sheet. Repeat with remaining broccoli batter.
  5. Bake 30 minutes, flip, then bake additional 15 minutes.
  6. While they’re cooking, make the turmeric tahini. In small bowl, combine ingredients and mix vigorously with fork until fully combined, and has an even, pourable consistency. If too thick, stir in one additional tablespoon water at a time until desired consistency is reached.
  7. Serve patties as a side dish, over a roasted veggie bowl or simply build a massive burger on a bun by layering the broccoli patty with lettuce, tomato, onion, avocado and turmeric tahini.

Recipe Notes

*To rice broccoli, chop broccoli into small pieces, stem included, and throw into a blender or food processor. Pulse briefly to process into small, rice-like pieces. Rice broccoli first, and then add it to the remaining ingredients.
