Creamy Cucumber Noodles with Tamari Sauce

The vibrant shade of green pops against the artful creation of an orange-tinted tamari dressing. All ingredients are raw and vegan, so you can fully experience the natural flavors and aromas in this one-dish wonder. If your mouth is watering, grab a pair of chopsticks and get ready to awaken all five senses.

Serves 1

Noodles

1-2 English cucumbers (or 4 small cucumbers)
1 cup chopped broccoli florets

Sauce

3-3/4 Tbsp. raw, unsalted almond butter
3-3/4 Tbsp. tamari
2-1/2 Tbsp. chia seeds
2-1/2 Tbsp. maple syrup
2-1/2 tsp. organic brown mustard
12 cherry tomatoes
2 cloves garlic
1 large piece of ginger

Directions

  1. Spiralize cucumbers and place in fridge while you prepare the dressing.
  2. In a food processor or high-speed blender, add all sauce ingredients and blend until completely smooth. Note: add ginger gradually until reaching desired taste.
