Bake your brunch-loving heart out with this lemon-custard filled treat. It’s sweet, it’s tart and it’s covered in juicy mixed berries – need we say more? Unlike typical pastry recipes, this one is free of processed sugars, dairy and eggs, which means it’s an ideal dish for company with these common dietary restrictions. If you’re craving more, use the leftover custard (the recipe makes two pastries worth) to make a dessert pastry! We suggest filling it with chocolate chips, peanut butter and bananas – but we’ll let you take it from here!

Easy Lemon-Berry Puff Pastry (Vegan)

Ingredients

  • 1 frozen puff pastry sheet, slightly thawed
  • 1 cup coconut cream
  • 7 oz. dairy-free cream cheese, softened
  • 4 Tbsp. potato starch
  • 2 Tbsp. pure maple syrup
  • 1-1/2 tsp. lemon extract
  • 3 cups mixed berries (strawberries, blueberries, raspberries & blackberries work well)
  • Lemon zest, to garnish
  • Mint leaves, to garnish

Instructions

  1. Preheat oven 400 degrees F. Slightly thaw puff pastry on counter before rolling it out.
  2. Meanwhile, heat saucepan over medium heat. Add coconut cream, cream cheese, potato starch and maple syrup. Simmer and stir constantly until mixture thickens. Remove from heat and place base of the pot in bowl of ice water. Whisk mixture as it cools. Add lemon extract and whisk until custard thickens and cools
  3. Roll out thawed puff pastry into rectangle shape. Use fork to score a 3/4-in. border around the edge. Then, use fork to prick the inside of the pastry (this keeps pastry from puffing up during baking). Do not poke through completely.
  4. Spoon half custard mixture onto middle of puff pastry and smear it evenly (avoid borders). Place berries on top of custard.
  5. Bake 20-22 minutes or until outer edges turn golden brown. To serve, garnish with lemon zest lemon and mint leaves.
