Ingredients
- 2 10- in. flour tortillas
- 5 oz. baby spinach
- 1/3 cup roasted red peppers sliced
- 4 oz. non-dairy cream cheese
- 2 oz. plant-based mayonnaise
- 1 tsp. fresh basil minced
- 1/2 tsp. dried oregano
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1/4 tsp. Himalayan pink salt
- 1/8 tsp. ground black pepper
- 1/2 cup non-dairy mozzarella cheese
Instructions

In large skillet over medium-high heat, cook spinach 2 minutes until wilted. Remove from heat, cool slightly and chop before placing in a bowl.

In medium bowl, mix together roasted red peppers, cream cheese, mayonnaise, seasoning and cheese with spinach.

Place filling in tortillas and spread evenly. Roll tortillas tightly. Refrigerate 15 minutes before slicing.
