Vegan Soft Serve “Ice Cream” with Balsamic Reduction

You‘ve tried some unexpected food combinations in your life. (Hello, pizza egg rolls.) But surely none of them have been as decadent and surprisingly delicious as vegan soft serve ice cream with balsamic vinegar reduction. Reducing the vinegar brings about an intense, sweet flavor that compliments the rich creaminess of the ice cream. It’s a heavenly pairing that’s sure to become your new favorite.

Bowl of Vegan Ice Cream with Balsamic Reduction Drizzle and Sliced Fruit

Ingredients

“Ice Cream”

1/4 cup full-fat coconut cream
1/4 cup almond butter
1 cup mashed sweet potato or pumpkin
1 tsp. vanilla powder or ground vanilla beans
Pure stevia, to taste, optional
Ice cubes

Toppings

1/3 cup balsamic vinegar
Slivered almonds, toasted

Directions

  1. In high speed blender, combine ice cream ingredients and blend until desired texture.
  2. In pan over medium heat, heat balsamic vinegar until reduced. Drizzle over ice cream or swirl together into a shake.
  3. Top or stir in almonds.
