  1. Preheat oven to 375 degrees F.
  2. Stir together ground chia meal and water. Set aside.
  3. Sift together flours, oats, protein powder, baking soda and salt. Set aside.
  4. Stir together almond butter, sugar and vanilla. Mix in chia egg. Mix in dry ingredients until combined.
  5. Stir in chocolate chips and walnuts.
  6. On ungreased baking sheet, drop approximately two tablespoons dough per cookie. Gently press dough to flatten slightly.
  7. Bake 12 to 17 minutes, until golden brown. Cool 2 to 5 minutes; transfer to wire rack to cool completely.
