But if a bowl of pasta in a rich, creamy sauce is what your savory dreams are made of, you’re in luck. This gluten-free and vegan mac and cheese dish, featuring a delicious sauce made from avocado, spinach, nutritional yeast and tofu, is the healthy-foodie-approved answer to your cuisine dreams.
Vegan Avocado Mac N Cheez
Yields 4 cups
Ingredients
2 cups gluten-free fusilli pasta
½ tsp. salt (for cooking pasta)
1 medium Hass avocado
8 oz. firm organic tofu
2 Tbsp. nutritional yeast
Juice of 1 lemon
1 cup organic spinach
½ tsp. pink salt
Vegan cheese of choice, to top
Directions
- Cook pasta according to package directions. Drain water when done.
- Meanwhile, in a food processor, combine avocado, tofu, nutritional yeast, lemon juice, spinach and pink salt. Process until smooth and adjust salt to taste.
- Add avocado sauce to pasta and mix until fully coated.
- Serve immediately, sprinkled with vegan cheese. Leftovers keep in the fridge for up to 2 days.
