Vegan Avocado Mac N Cheez

But if a bowl of pasta in a rich, creamy sauce is what your savory dreams are made of, you’re in luck. This gluten-free and vegan mac and cheese dish, featuring a delicious sauce made from avocado, spinach, nutritional yeast and tofu, is the healthy-foodie-approved answer to your cuisine dreams.

Vegan Avocado Mac N Cheez

Yields 4 cups

Ingredients

2 cups gluten-free fusilli pasta
½ tsp. salt (for cooking pasta)
1 medium Hass avocado
8 oz. firm organic tofu
2 Tbsp. nutritional yeast
Juice of 1 lemon
1 cup organic spinach
½ tsp. pink salt
Vegan cheese of choice, to top

Directions

  1. Cook pasta according to package directions. Drain water when done.
  2. Meanwhile, in a food processor, combine avocado, tofu, nutritional yeast, lemon juice, spinach and pink salt. Process until smooth and adjust salt to taste.
  3. Add avocado sauce to pasta and mix until fully coated.
  4. Serve immediately, sprinkled with vegan cheese. Leftovers keep in the fridge for up to 2 days.
