Instructions

  1. In large mixing bowl, combine maraschino cherries, pineapple chunks, blueberries, shredded coconut and vegan mini marshmallows. Set aside.
  2. In stand mixer, whisk coconut whipping cream on high speed until stiff peaks form.
  3. Add confectioners sugar, vegan sour cream and orange flavor to whipped cream. Whisk on low speed until well combined, about 1 minute.
  4. Gently fold coconut cream mixture into fruit mixture until well coated.
  5. Add mandarin orange slices and gently fold them in.
  6. Serve immediately or refrigerate for later use.

Recipe Notes

Note: If using canned fruits, make sure to completely drain them from the liquid they are soaked in.
