In the United States in the 1930s, pop icon Popeye sang of its virtues as it gave him super-strength. Equally delightful raw in a smoothie or baked in a quiche, spinach can also be incorporated into sweet fare. In this recipe, bananas and spinach combine with gluten-free flour and a pinch of sugar, chia seeds and vanilla for a nutritious (and naturally green!) sweet treat. Enjoy it as part of a powerhouse breakfast or as a nutrient-dense super-snack.

Ingredients
- 1 cup gluten free all-purpose flour
- 1 tsp. baking powder
- ¼ tsp. Himalayan pink salt
- 1-½ cups spinach fresh
- 2 bananas
- 3 Tbsp. coconut oil
- ½ cup sugar
- 1 Tbsp. chia seeds
- 1 tsp. vanilla
Instructions

Preheat oven to 350 degrees F. Line muffin tin with paper liners.

Use food processor to puree all ingredients for 2 minutes until combined.

Scoop 3 tablespoons batter into each muffin liner.

Bake for 18 minutes.
