Grilled Sweet & Spicy Shrimp Skewers

Simple and scrumptious, grilled shrimp glazed in a sweet and spicy sauce makes for a perfect weeknight dish. Marinate the shrimp with honey, lime and Asian chili-garlic sauce, then fire up the grill or cook it in a grill pan on your stovetop for seared-in flavor. Serve with a side of basmati rice for dinner or share the goodness as an epic appetizer.

Grilled Sweet & Spicy Shrimp Skewers

Ingredients

  • 2 lbs. jumbo shrimp peeled and deveined
  • 2 Tbsp. peanut oil or avocado oil
  • 1 Tbsp. unsalted butter melted
  • 1/4 cup finely chopped cilantro
  • Lime wedges

Marinade

Instructions

  1. Soak bamboo skewers in cold water.
  2. Rinse shrimp in cold water; drain and pat dry.
  3. In large bowl, combine all ingredients for marinade.
  4. Add shrimp and gently mix to coat. Refrigerate 30 minutes.
  5. Thread shrimp onto skewers, piercing through both head and tail ends.
  6. Using brush, slather all sides with remaining marinade, reserving some marinade for basting.

Stovetop method

  1. In 11-inch grill pan over medium heat, heat one tablespoon oil.
  2. Cook shrimp (four skewers at a time) for 2-3 minutes per side until shrimp is opaque and cooked through. Baste with marinade on both sides while cooking.
  3. Transfer skewers to serving plate.

Gas grill method

  1. Preheat grill to medium-high heat. Brush grill grate with oil and arrange skewers on it.
  2. Cook shrimp on skewers 2-3 minutes per side until shrimp is opaque and cooked through. Baste with marinade on both sides while cooking.
  3. Transfer skewers to serving plate.

To serve

  1. Brush shrimp with melted butter; garnish with cilantro and lime wedges.
