Roasted Sweet Potato Hummus

Hummus is a great healthy go-to to have on hand for a protein-filled snack, as an easy appetizer or as part of a nutritious lunch – and there are so many variations on a theme. This spin incorporates classic ingredients like chickpeas and tahini, but adds the sugary nuttiness of sweet potato. Paprika, cumin, cayenne and garlic lend heat and harmony for a warming, savory vibe.

Instructions

  1. Preheat oven to 400 degrees F.
  2. In bowl, add sweet potato and toss with 3 tablespoons olive oil. Spread potatoes out on sheet pan and bake 15-20 minutes, until tender.
  3. In food processor, combine chickpeas, sweet potato, tahini, lemon juice, garlic, 1/2 teaspoon olive oil, salt, paprika, cumin and cayenne; Blend for one minute, scraping down sides as needed.
  4. Add water or aquafaba 1 tablespoon at a time and blend until desired thickness.
