Lemonade is one option. But, in our opinion, that’s still too much sugar. We think, if life hands you lemons, there’s a sweeter choice – yet it comes with no added sugar. This lemon curd recipe features monkfruit extract, a natural, calorie-, carb- and sugar-free sweetener that comes from a small, green Asian melon. Vegan butter and coconut butter allow you to skip the eggs and butter in traditional lemon curd, making this spread and topping totally vegan and totally guilt-free. Pucker up!

Instructions

  1. In stainless steel pan over medium-low heat, use a wooden spoon to stir all ingredients into a smooth consistency and bring to a slight simmer.
  2. Remove from heat and let cool.
  3. Store refrigerated in an airtight jar or freeze.

Recipe Notes

Remember, when adding monkfruit, less is more. A pinch of monkfruit is equal to about 1 tsp. sugar.
