Watching the big game this Sunday? While you’re rooting for your favorite team, there’s no doubt you’ll be simultaneously gorging on typical game-day fare.
Since it’s also the most popular day of the year for pizza deliveries, the chances you’ll be tempted to mindlessly indulge in a slice (or two or three) are high. Instead, plan ahead by preparing this creative party appetizer to feed yourself and your friends!
As the recipe title suggests, this is no ordinary pizza. This version, stuffed with dairy-free cheese and veggies, is pressed by a waffle maker for the most perfectly textured pizza ever. It’s a unique dish that will quickly become a savory staple for future football parties and beyond.
Ingredients
1 lb. whole wheat pizza dough
1/4 cup marinara sauce, homemade or store bought (plus more to for dipping)
1 small red onion, sliced
1/2 large red pepper, chopped
1/2 jalapeño, chopped
10-12 baby spinach leaves
1/2 cup shredded vegan cheese
Nutritional yeast, to sprinkle
Salt & black pepper, to taste
Waffle maker
Directions
- Divide pizza dough into 4 equal parts. On parchment paper (or another smooth surface), roll out each part into 7-8-in. diameter circles. Preheat waffle maker.
- Take one piece rolled dough and apply around 2 tablespoons marinara sauce on top. Top with onions, red pepper, jalapeño and spinach. Sprinkle on nutritional yeast, salt and black pepper. Top with vegan cheese.
- Oil waffle maker with non-stick spray. Transfer dough with veggies to waffle maker. Layer on another piece of rolled dough. (Optional: apply marinara sauce to top layer.)
- Close waffle maker and cook 6-7 minutes or until golden brown. Repeat with remaining dough. Cut pizza waffles into triangles and serve with marinara sauce for dipping.
