Pass the popcorn, please. Whether it’s movie night or you’re snacking in between meals, you’ll want a big bowl of this zesty, vegan popcorn nearby. Though you might think of popcorn as a fat- and calorie-loaded snack, this version is anything but. Instead of being doused in butter and salt, this recipe uses ever-popular coconut oil for popping and makes a “cheesy” seasoning mix with nutritional yeast and other spices. Dig in!
Ingredients
1/2 cup yellow or Bob’s Red Mill White Popcorn
1/4 cup Bob’s Red Mill Nutritional Yeast
1/4 cup coconut oil
1 tsp. ground paprika
1 tsp. salt
1/2 tsp. chili powder
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. ground cumin
1/8 tsp. ground cayenne pepper
Directions
- In a small bowl, combine nutritional yeast and spices. Set aside.
- In a large pot over medium-high heat, heat coconut oil until melted.
- Add popcorn kernels and cover, shaking pot occasionally. When you start to hear popping, begin to shake pan more frequently. Popcorn is done and should be removed once it’s been more 3 seconds without a pop.
- Transfer popcorn to a large bowl and toss with spice mixture.
