Spiced Pear Cake (Gluten-Free & Vegan)

Pears come into season in the fall, so why not look for more ways to enjoy them? Here’s an idea: try baking them in a cake! This delicious, elegant and better-for-you dessert “pears” perfectly with hot tea on a cold day. Made with gluten-free flour, apple pie spice and no dairy or egg, this vegan version is as wholesome as it is delectable. Any type of pears will do in this recipe (and there are many!), but sweet, crisp Bosc, Anjou and Asian pears hold up beautifully in baking. Its impressive presentation and sweetly spiced taste are sure to chase away the chill.

Spiced Pear Cake (Gluten-Free & Vegan)

Ingredients

*Make your own apple pie spice

  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. allspice
  • ¼ tsp. ginger
  • ½ tsp. cardamom

Instructions

  1. Preheat oven to 350 degrees F. Grease round 9-inch cake pan with coconut oil.
  2. In medium bowl, sift together flour, baking powder, salt and spices. Stir in egg replacer, sugar, apple sauce, coconut oil and water. Combine well.
  3. Pour batter into cake pan. Place pear wedges onto cake in a circle pattern with points facing inward and toward the edge.
  4. Bake for 25 minutes or until a toothpick comes out with just a few crumbs attached.
  5. Let cool slightly, remove from baking pan and place onto platter. Serve warm.
  6. Refrigerate remaining cake.
