Sparkling Peach-Mint Mocktail

Ingredients
- 7 peaches pitted and sliced
- 28 sprigs fresh mint plus more for garnish
- 3/4 cup honey simple syrup* or maple syrup, cooled
- 1/3 cup lemon juice
- 2 Tbsp. ginger juice
- 4 cups sparkling water or seltzer
- 4 cups ice plus more
Instructions

In muddler, combine 1 peeled peach and 24 mint sprigs. Muddle together until fragrant and most of the mint has broken into small pieces.

In food processor, blend 3 peaches until smooth.

In large pitcher, add ice. Pour in muddled mixture, peach puree, honey simple syrup, lemon juice and ginger juice.

Pour in sparkling water; swirl.

To serve, pour into glass-filled cocktail glass. Garnish with remaining mint and peach slices.
Recipe Notes
*To make your own honey simple syrup, combine 2 cups honey and 2 cups filtered water in small saucepan over low heat. Cook, stirring, until combined.
