Slow Cooker Lemon Chicken & Broccoli Soup

You’re accustomed to pairing chicken with a side of broccoli, but the fresh lemon juice added to this easy, slow cooker soup really ties the two flavors together. Coconut milk thickens the soup and, along with the seasonings, creates a tasty broth. Make ahead of time to use for quick, weekday lunches or enjoy as a comforting, hands-off dinner for the whole family.

Slow Cooker Chicken Soup with Lemon & Broccoli

Makes 6 cups

Ingredients

1 lb. chicken breasts
12-14 oz. broccoli, cut into small florets and stalk trimmed
1 can coconut milk
13.5 oz. water
1/2 tsp. pink salt
1/2 tsp Herbamere
1/4 tsp. ground black pepper
1/2 tsp. dried thyme
1/4 cup fresh lemon juice

Directions

  1. Add coconut milk to slow cooker pot. Fill can up with water and add to pot.
  2. Add chicken breasts, broccoli and remaining ingredients.
  3. Cover and cook on low for 6 hours.
  4. After cooking, remove chicken breasts, shred and add back to soup.
  5. Season to taste. Serve warm.
