Easy to make and low in calories and carbs, this rice made from the konjac plant is also blissfully gluten free. Make a batch of this fruity, sweet and creamy shirataki rice breakfast pudding and you’ll never have a boring breakfast again. The mixture incorporates coconut milk for a swoon-worthy consistency that can be flavored with any fresh berries you’d like. Make a big batch, divide into portions and enjoy it throughout the week. It makes for a great snack or dessert, too!

Ingredients
- 1/2 cup puréed raspberries or strawberries
- 1 Tbsp. black chia seeds
- 1 cup coconut milk
- 2 drops liquid stevia
- 1 pkg. Miracle Rice
Optional
- Low-carb granola
- Whole raspberries or strawberries
Instructions

Prepare rice according to instructions on package.

In mason jar, glass or small bowl, add puréed berries, chia seeds, coconut milk, stevia and 1/2 cup rice; Mix together.

Chill in refrigerator 20 minutes or overnight, garnish with berries and granola, if desired.
