Noodles universally represent a cozy hug, and no matter your health goals or diet restrictions, you deserve the oversized sweater that is noodles.

Lemongrass Meatballs With Shirataki Noodles

Meatballs

Instructions

  1. Preheat oven to 425 degrees F and prepare a baking sheet with foil and nonstick spray.
  2. To prepare pasta and sauce, place large skillet on low-medium heat. Cook garlic and ginger for 3 minutes.
  3. Add coconut aminos, Thai chili garlic sauce, fish sauce, broth and water and bring to boil.
  4. Allow mixture to reduce for 8 minutes.
  5. Add noodles and let cook while meatballs are prepared.
  6. To prepare meatballs, combine chicken, onion, lemongrass, Thai chili garlic sauce, aminos, fish sauce and salt in large bowl.
  7. Roll into 1.25-inch balls and place on prepared baking sheet.
  8. Bake 12-15 minutes or until internal temperature reaches 165 degrees F.
  9. Stir lime juice into noodle mixture and turn off heat.
  10. Prepare dish with noodles and sauce, meatballs and desired garnishes.
